Kahawa ya kati in Swahili means - Medium Coffee Strength

Our signature, fresh locally roasted, Ethiopian Sidamo is a natural processed coffee from the south western highlands of Ethiopia, and is sun dried on raised beds. This coffee grows with lush red berries and gives huge floral aromatics off the grinder, always with a superb smell of fruity tones. 

This bean has the biggest impact in a light to medium roast depth. Works well in milk, as a long black, as a short black and as a filter coffee. Hugely interesting all rounder with a big fruity juicy punch. 



Fruit in a coffee bean is a highly cherished attribute. 

Coffee bean roasters like to preserve this character as best we can by roasting the coffee to at most a medium roast depth.

This means there will be some acid remaining in the roasted coffee beans and it's very important that you are able to manage this acid when brewing or extracting the coffee beans into a beverage.

If we roast darker, the acid is tamed, but we lose fruit and we are left with something that resembles a dark chocolate which can be all too familiar and common with many Southern and Central American coffee beans - in other words, it's becomes boring or uninteresting.

Ethiopia and almost all African origins growing coffee provide very unique and wonderful character in their coffee beans.

Our intention is to showcase these complex features within a degree of balance - if we roast too light, the fruit and acid would be over-powering.

Coffee Storage

Coffee has four age old enemies; heat, light, air and moisture. The way coffee is stored is essential to keeping it fresh and ready to enjoy. Storing coffee in conditions that expose it to these elements will allow for the coffee to lose its flavour rapidly. Coffee should be stored in an airtight container. We suggest either a glass, metal or ceramic version. Coffee should not be stored in the freezer, contrary to popular belief, as it leads to moisture extracting the flavour of the coffee. Coffee beans are porous and will also absorb unwanted flavours from your freezer.
